In the beginning of December 2012, I was able to take Wilton’s Tall Cakes Course, and goodness, was it fun! This class is a three hour, sort of intensive course on how to build your very own tall cake. We were required to bring all of our decorations and cakes pre-made  among the designated list of equipment you get on the syllabus. On another note, I highly recommend you consult your instructor before purchasing some items, since you might have a great idea, just not the tools or know-how on how to go about it. For my tall cake, I went rather small (it’s just me and my husband here), and it stood about 12 inches tall! Yet my theme was anything but miniature, I chose dinosaurs!

Let’s just say I’m not the best with fondant. The cake is a topsy turvy design, where one cake is slanted on top of another. I consulted my instructor before going on about my cake design and as luck would have it, she knew exactly what I wanted. She guided me through the process and I could not be happier with the end product. I also marbled the fondant just by using brown food coloring mixed into the white. The cake was also carved in order to give it a rocky mountain sort of look. I do have to say, for my very first time covering a cake in fondant, I didn’t do too badly!

    1. You guys are so kind! I did really try. Thank you so much. Seriously, those baking shows like Cake Boss and Ace of Cakes makes fondant usage look like the easiest thing on the planet.
