The Breakfast Cookie: Applesauce, White Chocolate Bits, and Peanuts Included

To be completely honest, I am not entirely sure how this cookie came to be. I wanted to bake something with applesauce as the main ingredient and this is what happened. What is this? It’s pretty much a breakfast cookie. It goes wonderfully with coffee and it does not make me feel absolutely horrid for eating way too many of them.

Ingredients:
1 C applesauce
1/2 C sugar
1 stick of butter
2 eggs
1/2 tsp vanilla extract
1 tsp of ground cinnamon
1/2 tsp of baking soda
1/2 tsp of baking powder
2 C of all-purpose flour
1/3 C of white chocolate chips
1/3 C of chopped peanuts

1. We’re switching things up in my kitchen today! The oven should be preheated to 400 degrees. If the oven seems reluctant to do so, just give it a little pat on the belly. This action will reassure your oven while reaffirming its trust in you.

2. In a large bowl, cream the butter, sugar, eggs, vanilla, and cinnamon. Once those ingredients are well mix, graciously add the applesauce. The applesauce is the star ingredient of these cookies. You want to make sure that it feels absolutely special throughout the mixing process. This can be accomplished by whispering sweet nothings to the applesauce.

3. Once the applesauce is wooed and possibly swooning, add the dry ingredients. Mix well, and then add the delicious chocolate chips and peanuts.

4. The batter will be rather liquid when finished. Do not worry. Do not panic. Calm yourself! It’s okay. It’s meant to be that way. To bake these cookies, grease and line a cookie sheet with parchment paper. Bake the cookies from 8-10 minutes or until golden.
