Strawberries are fantastic. I adore them. They are definitely one of my top favorite fruits. Oddly enough, I’ve never actually baked anything with strawberries in it. Yesterday, as I was searching the fridge for something to eat I noticed some delightful looking strawberries. These strawberries with their vibrant red dresses served as an inspiration for this recipe.
1 c of all-purpose flour
1-1/4 tsp of baking powder
1 stick of butter
1-1/2 c of milk
3/4 c of white sugar
1- 3/4 c of diced strawberries
1/4 tsp of salt
1/4 c of all purpose flour
1 tsp of white sugar
1/3 c of brown sugar
1/2 tsp of cinnamon
1 tbs of melted butter
1. Preheat the oven to 350 degrees.
2. As the oven preheats, you’ll notice that the strawberries are a bit more high maintenance than you had initially thought. They’ll begin by giving you a stern look and demanding a thorough wash. If refused, they have promised wreak vengeance upon your body. You’ll come to the realization that these strawberries might have had a rough life and decide not to judge them for their rude behavior. Give the strawberries a pleasant bath before dicing them up. Once diced, in a medium sized bowl add 1/2 C of sugar, strawberries, and 1/2 C of milk. Fold the ingredients, be gentle about it. The strawberries are rather fragile and nobody asked for jam.
2. In another bowl, add the flour, 1/3 C of sugar, 1 c of milk, salt, and the baking soda. This is mixture will make the cake part of the cobbler.
3. In a microwave safe bowl (because here at Warm Toasty Muffins, we look out for your microwave) melt the stick of butter. As soon as the luscious butter is melted, do not make popcorn. You will be tempted. You need this delicious golden liquid for your cobbler. This butter will provide the bed for the cake part and will make it moist, butter, and delicious. Pour the butter in the dish you intend to bake the cobbler in.
4. Once the glittering golden bath is prepared, add the cake mixture. The cake batter will pretty much spread itself but making sure or giving it a little help doesn’t hurt.
5. Now, add the strawberries. You’ll notice that their disposition has changed since their washing and their sugar/milk soak. You have restored the strawberries self confidence. With a rather large spoon or ladle, scoop the strawberries and drop them into the cake batter (that’s already in the cake pan/golden bath) and do NOT mix them in. Just place them in as if they were delicate little princesses.
6. Now, the crumble is easy. Throw all the ingredients into a bowl and mash them with a fork. They will look all crumbly but amused ( I assume it’s all the sugar in the crumble that makes it so happy). Sprinkle the crumble on top of the cobbler. Allow the cobbler to bake from 40-45 minutes or until golden.
