Coquito is a Puerto Rican drink, equivalent to eggnog, made of all that is delicious, pure, and beautiful on this earth. I say eggnog because it’s a drink we usually have during the holidays. However, it does not have an eggy taste at all and it’s more like a coconut liquor, creamy, thing of just justice and love. I don’t know guys! It’s wonderful! So, I came up with this recipe. My variation is partly inspired by my mother’s. You’ll love it! Try it. Shove it down all your friends’ throats!
Ingredients
15 oz of Coco Lopez (coconut cream)
14 oz of condensed milk
12 oz of evaporated milk
6 0z of milk
13 oz of coconut milk
2 tsp of vanilla extract
1 -1/2 tps of cinnamon
12-14 oz of white rum (Don Q, Bacardi whatever you prefer)
1. In a blender, throw all of your ingredients together. Don’t forget to be gentle, they’re precious. You want to make sure that there are no bits of coconut from the coconut milk in the mixture. Absolutely no one likes those things in their drinks. It’s gross.
2. Once the concoction is blended, add the alcohol. I suggest you add it bit by bit. I noticed that 12 oz is the perfect amount because it does not take away from the Coquito. I, on the other hand, was raised on an alcohol free version of Coquito which is just as delicious if not even more so. For the alcohol free version, just nix the alcohol from the recipe!
