Coconut flavored desserts are pretty fantastic and don’t have to be really difficult to make. I was having a coconut craving when inspiration struck. I made these cupcakes using leftover ingredients and a box of Funfetti cake mix. At first, I was a little apprehensive about using boxed cake mix, since I felt like I was using the easy way out. Regardless, I was feeling lazy and the result was exactly what I wanted.
Ingredients:
1 package of white cake mix (or Funfetti)
1 tsp of coconut extract
1 C of milk
1/3 C of vegetable oil
3 eggs
Frosting
8oz of Cream Cheese
1 stick of butter (softened)
1 tsp of coconut extract
1 1/2 C of Coconut flakes
2 1/2 C of powdered sugar
1) Preheat that beautiful piece of machinery known as the oven to 350 degrees.
2) In a large bowl, follow the instructions provided on your white or Funfetti cake mix but replace the 1 cup of water for milk. Before adding the milk, make sure you add the coconut extract to it.It’s like your own makeshift coconut milk! Be careful not to overmix. I like to alternate my stirring with the liquid ingredients.
3) Once the cake badder is smooth and ready, line your cupcake tray with the cupcake dresses. As soon as all is prepared, pour the appropriate amount of badder into the dresses. Bake the cupcakes anywhere from 10-12 minutes. Don’t forget to tell the cupcakes they look absolutely lovely. This will give the cupcakes a confidence boost allowing them to mature into beautiful cupcakes.
Frosting
1) This frosting is easy-peasy! Add all of the ingredients into your mixer and mix on the lowers setting. You could do do it by hand. I have, it takes a lot of resolve and dedication. You might even give up halfway. Don’t! YOU ARE STRONG!
