My Beautiful Sister's Birthday Cookies

Baking

I baked a cake. I baked a cake two days ago and it didn’t rise. I must have used really old baking soda. I had three different boxes and chose the sad box. It was like baking soda roulette and I picked the worst whatever it is you pick because I don’t even know what roulette is or how it’s played.

I just imagine a big circle with options and a ball or arrow that will fall into a good or bad one. Am I right? I should have Googled this. Cookies! My big sister turns a whopping 27 years old on the 8th of March. She is my beacon of light. She is also my bacon of life. No, no she isn’t. She is an incredible human being. My childhood was precious because she was a part of it. This year is a big year for her. In about a month she will also be becoming a mommy for the very first time. Needless to say, I am incredibly honored to have her as my big sister.

These cookies are really very good. If there is something you guys should know about it, it’s my unadulterated hate towards raisins in cookies, specifically. I can tolerate a raisin in like those Ant Logs things but really, really in nothing else. Granola with raisins? BLERGH! Cookies with raisins?! BLERGH! Puddings with raisins?! BLERGH! Raisins?! DEAR COD FISH STOP WITH THE RAISINS! However, my big sister loves the things. I mean, she snacks on them like it’s nobody’s business. Ew! I made these cookies for her (and my husband, of course, he also loves raisins).  I do have to say, I ate one cookie and was very pleased with my result. If you do not like raisins, give these a go. You might like them.

Ingredients:
1 1/2 C of all- purpose flour
2/3 C of sugar
1 tsp of cinnamon
1 tsp of vanilla extract
1/2 C of Instant Oatmeal (dry)
1 tsp of baking soda (the good kind, not the old kind)
1/2 tsp of baking powder
1 large egg
1 stick of butter
1 C of white chocolate chips (in reality, add how much you’d like or find sensible or non-sensible)
1 C of raisins (Ew)

1. Preheat your oven to 350 degrees. Today, the oven feels sad for you. It feels as if the cake not rising was its fault. Reassure it that it is not. There was nothing either of you could do. That baking soda tricked you both. It is now where it belongs. Not in the trash but isolated from the other baking sodas in the pantry (I’ll get to throwing it out).
2. In a large bowl, mix the butter, sugar, and vanilla. Once those are fluffy and filled with the utmost joy, add the delicious oats. Please do not cook the oats before adding them. That would be gross. Use dry instant oats.
3. To the joyful concoction, add the flour, cinnamon, egg, and baking sodas. Mix these until they are getting along swimmingly. They mustn’t be rushed into a relationship. Let them sit by each other for a bit. Let them mingle. They’ll be laughing soon enough at each other’s jokes. This is when you’ll strike! Tell them that everything will be okay, that this is what they were brought on this earth to do. The ingredients will, at first, feel a bit overwhelmed by the weight of their duty. Make sure to remind them that your sister is very important to you and their decision to partake in the cookie process will guarantee the happiness of two very beautiful girls.
4. Now that the ingredients have forged an indestructible bond,  add the chocolate chips, and raisins (EW). Mix these in without using a machine of any kind. Use a spatula or your own hands.
5. In a lined cookie sheet, roll the dough to the desired size and bake from 10-12 minutes or until a bit golden brown around the edges.

    1. I loathe raisins. They have no business being in my cookies. My sister, however, loves them. So for her, I will bitterly add the raisins.
