What?! Peanut Butter and Jelly Cookie!

I’ve been hankering for a peanut butter and jelly sandwich all week. This is how every morning has gone about: I wake up, I think about making myself a peanut butter and jelly sandwich, but I end up getting distracted and eating something else. This has happened for at least the past four days. I don’t know what is going on. I’m starting to think the peanut butter and jelly gods do not want me eating their delicious sandwiches. But, I should count myself lucky! The lack of peanut butter and jelly sandwiches has led me to make these little bad boys.

Ingredients:

1/2 C of all-purpose flour

1/2 C of crunchy Peanut Butter

1/2 C of smooth Peanut Butter

1/2 of vanilla

1/2 C of  sugar

1 tbs of milk

1 large egg

1/2 tsp of baking soda

3 tbs of Welch’s grape jelly (or any jelly, really)

1. The oven is acting up again. It claims you haven’t put it to good use in at least a week.  I suggest you look it straight in the face and simply apologize. You did that oven wrong. Or it thinks you did it wrong and did not, whichever the case, you just apologize and give it a hug. As soon as the oven has relaxed, preheat it to 350 degrees.

2. In a medium sized bowl, add the crunchy/smooth peanut butter and sugar. Mix until the sugar and peanut butter are well blended and smooth.

3. To the previous mixture, add the vanilla and egg. These little guys will help the mixture taste better and join the rest of the ingredients in cookie harmony. You want this cookie to be pleasantly harmonious and not just a mess.

4. Now that the mixture is balanced, add the flour and baking soda. Mix until it takes a dough-like form then add the milk. So, um, try it! It’s delicious. It has eggs in it so be careful. I don’t want you getting sick. It’s still super delicious as a dough but just think of the amazing cookie this dough will become!

5. It’s time to bake some cookies! In an ungreased cookie sheet, place your round cookie balls, and then add your thumb print right in the middle of your cookies. Not too hard! Bake the cookies for 9-11 minutes. Once they are out of the oven, add the jelly. If you use the jelly I used (link in the ingredients) all you’ll have to do is mix the jelly in a bowl and it’ll become easier to work with.

6. These cookies are very delicate when warm, so please allow them to cool for a bit once taken out of the oven. Give them a minute to firm up, but add the jelly as soon as you take them out of the oven.

You’re done! Give yourself a round of applause and possibly some cheers. Go and devour these little precious delicacies!

  1. It’s like PB&J is taking over the world. I just finished reading a post about a bento PB&J, and now here it is as a dessert. Love it! 🙂
